Chef and Coles ambassador Courtney Roulston shows how to make the Vietnamese version of the viral smashed cheeseburger tacos, called ‘smashed banh mi tacos’.
SMASHED BANH MI TACOS

Ingredients –
8 small soft tortillas
500g Coles Pork mince
1 tablespoon fresh ginger, minced
2 tablespoons fish sauce
2 green spring onions, white parts finely sliced, green tops reserved
2 tablespoons Kewpie mayonnaise to serve
½ cup coriander, sprigs picked
1 Lebanese cucumber, julienne
1 long red chilli to serve, julienne *Optional
Pickled Vegetables:
1 cup carrot, shredded
1 cup Daikon radish, shredded
¾ cup rice wine vinegar
1 teaspoon sea salt
2 tablespoons honey
Method –
Step 1. Place the carrots, daikon radish, vinegar, salt and honey into a bowl and mix until combined. Set aside to pickle for 20 minutes while you prepare the tacos.
Step 2. Mix the pork mince, ginger, fish sauce and the white parts of the spring onions in a bowl until well combined. Divide the mixture up into 8 even portions then spread the pork mixture onto one side of the tacos.
Step 3. Heat a large non-stick pan over a medium heat. Cook the tacos in batches pork side down for 3-4 minutes, or until cooked through. Turn over and cook for 1 minute on the other side. Repeat with all the tortillas and keep warm.
Step 4. To serve, drizzle a little mayonnaise onto the tacos then top with pickled vegetables, cucumber, green spring onions, chilli and coriander sprigs.
