Crispy Crunchy Pork Belly with a hint of Spice

– 1 tablespoon of salt
– 1 teaspoon of Chinese five spice
– 1 teaspoon of white pepper
What you do:
1. the first step to achieving that crispy-crackly pork is planning ahead. if possible, snag your pork belly a day in advance and let it chill in the fridge, uncovered. it’s all about the dryness factor
2. when it’s time to get cooking, pat your pork belly dry with some paper towels.
3. take the salt, Chinese five spice, and white pepper and mix them all together.
4. rub that flavourful spice blend all over your pork. get into every nook and cranny, and don’t forget the skin!
5. now it’s foil time! wrap up your pork in foil, but keep the top uncovered. this trick keeps your meat moist and juicy, but still lets the skin get that awesome crispy texture.
6. pop your wrapped-up pork into your air fryer. set the timer for 60 minutes and the temperature to 180C.
7. once your air fryer dings, give your pork a little rest. let it sit for about 10 minutes before you dive in. patience is a virtue, my friends, and it pays off with incredibly tender pork.
8. last but not least, don’t forget to pour those delicious juices all over your pork. trust me, it’s like a flavour bomb that takes your pork to the next level.
Cheesy Lemony Roast Potatoes
What you need:
4 medium potatoes (and don’t forget to peel them!)
1 teaspoon of salt
olive oil
1/4 cup of grated parmesan cheese
2 tablespoons of melted butter
the zest of a lemon.
What you do:
1. first things first, chop up your potatoes into big bite size hearty pieces, then soak them in some cold water for about 10 minutes.
2. once they’ve had their little bath, drain them and pat them dry using some paper towel or a clean tea towel. we don’t want soggy spuds now, do we?
3. now, get a bowl ready, plop in your potatoes, splash over some olive oil and sprinkle in the salt. give them a really good mix to make sure they’re all nice and coated.
4. next, pop these potatoes into your air fryer, and let them cook at 200c for 25 minutes. halfway through, give them a shake so they get evenly cooked.
5. mix up your melted butter, lemon zest, and cheese in another bowl. get it all nice and combined.
6. when your potatoes are all cooked up and ready to meet their cheesy fate, plop them onto your cheese mixture. toss ‘em and turn ‘em until they’re all coated in that delicious, tangy, cheesy butter!
