Mood Boosting breakfast Tacos

2 eggs

2 tbsp cottage cheese

2 tsp All natural Mexican or Taco seasoning

Salt & black pepper

Salsa:

1 tomato, diced

1/4 red onion, diced

1/4 bunch coriander, chopped

1/4 cup corn kernels

Juice 1 lime1/2 avocado, slicedMini Tortillas

50g Feta Cheese, for garnish (optional)

Method

Add the eggs, cottage cheese, taco seasoning and S&P into a bowl and whisk until well combined. Add eggs into a pre-hearted fry pan with olive oil or butter and gently scramble over a medium heat.

To make the salsa, simply prepare all ingredients accordingly and add to a bowl. Season and add juice of 1/2 lime.

To assemble the tacos simply heat your tortilla, add the eggs, salsa, a slice of avocado and crumble feta on top. Serve and enjoy!

Mood Boosting Breakfast Smoothie

1 cup Frozen Berries

1/2 Banana

1 Medjool Date

1/4 cup Greek Yoghurt

1/4 cup Rolled Oats

Milk of choice

Add all your ingredients into a blender and blend until smooth and creamy. Pour into your serving glass and enjoy!
