The 42-year-old man was “stabbed multiple times while inside a kebab shop on Dawson Mall” in Mt Druitt about 8am on Friday, police allege.
He was taken to Westmead Hospital with critical injuries, where he has since undergone emergency surgery and is now reported to be in a stable condition.
Another man allegedly fled the kebab shop before police arrived, catching a taxi on North Pde.
Police allege the man “left the taxi and entered a fast-food restaurant on Jersey Rd (in) Plumpton”.
Crime scenes were established at both restaurants, and the taxi was also seized for forensic examination.
A 38-year-old man was arrested a shot time later on Daniels Rd in Hebersham.
He was taken to Mt Druitt Police Station, then Auburn Hospital as a precaution.
“However, while at the hospital, police will allege the man climbed into the ceiling with officers deploying a taser to take him back into custody,” NSW Police said.
The 38-year-old has since been released from hospital and charged with attempted murder and escaping police custody.
The man has been refused bail and is scheduled to appear before Parramatta Bail Court on Saturday.
