Michael Shafran celebrates Thanksgiving with the blend of two American favourites – turkey dinner and New York style bagel 

Michael Shafran is a food journalist and travel writer.

He is also the founder of Brooklyn Boy Bagels in Marrickville. He also sells fresh bagels across a range of farmers markets in NSW.

Today, Michael is making three different Thanksgiving themed bagels: Turkey roast bagel, Cranberry cream cheese bagel and Pumpkin spice bagel with pumpkin spice cream cheese.

Recipe below:

Turkey Bagel Sandwich

(Makes 1 sandwich)

Ingredients

1 bagel: we recommend everything or pumpkin

20g butter (we used Pepe Saya cultured butter)

100g turkey (we used smoke turkey breast from Black Forest Smokehouse), sliced

20g coral green lettuce

45g large truss tomato

1 slice Maasdam cheese (Swiss)

20g Cranberry sauce

Sea salt flakes and black pepper to taste

Method

  1. Slice the pumpkin bagel in half and toast.
  2. Spread butter on both sides.
  3. On the top half of the bagel melt the slice of Maasdam cheese
  4. Meanwhile, on the bottom bagel, spread the cranberry sauce on the bottom bagel half, then top with
  5. Lettuce and tomato
  6. Season with salt and pepper to taste
  7. Places turkey on top
  8. Put the top half of the bagel on, wrap and slice in half

Cranberry Cream Cheese

Ingredients

250g cream cheese, softened

150g cranberry sauce

100g powdered (icing) sugar

Zest and juice of 1 orange

Method

  1. Put the cream cheese into a stand mixer on medium and whip with the paddle attachment until softened and smooth
  2. Add powdered sugar and mix on low until smooth.
  3. Add the rest of ingredients and mix on low untilcombined.
  4. Whip for a further 1 minute on high, then spread onto bagels

Pumpkin Spice Cream Cheese

Ingredients

250g cream cheese, softened

150g roasted pumpkin

5g salt

50g honey

5g cinnamon, ground

50g white sugar

50g brown sugar

Method

  1. Put the cream cheese into a stand mixer on medium and whip with the paddle attachment until softened and smooth
  2. Add brown sugar, white sugar, honey and cinnamon, then mix on low until combined.
  3. Add pumpkin and mix on low until smooth.
  4. Whip for a further 1 minute on high, then spread onto bagels
