MKR recipe episode 11: Gaufre de Bruxelles with Strawberry Lime Sauce and Dark Chocolate

Ingredients

Cocoa powder, to dust

Diced strawberries, to serve

Crushed toasted hazelnuts, to sprinkle

Mint sprigs, to decorate

Waffles

200ml luke warm milk

30g soft icing mixture

20g yeast

4 eggs, at room temperature, separated

250g self raising flour

200ml sparking water

125g butter, melted

2 tsp vanilla extract

Pinch of salt

Strawberry-lime sauce

250g punnet strawberries, hulled, chopped

2 tbs water

2 tbs icing sugar

1 tbs lime juice

Chantilly cream

300ml thickened cream

2 tbs caster sugar

½ tsp vanilla extract

Chocolate sauce

100ml olive oil

100g dark chocolate

1 tbs cocoa powder

60ml thickened cream

15g butter

3 tsp soft icing mixture sugar

Method

1. To make waffle batter, combine milk, icing sugar and yeast in a bowl. Set aside for 10 minutes or until frothy.

2. Whisk egg whites until stiff peaks form.

3. Place flour in bowl of an electric mixer. Add milk mixture and mix slowly to combine. With motor operating, gradually add the sparkling water. Add egg yolks, butter and vanilla. Fold in egg whites in three batches. Set batter aside, in a warm place, for 1 hour to rest.

4. Meanwhile, to make strawberry-lime sauce, stir all ingredients over a low heat until strawberries are soft. Simmer until thickened. Using a stick blender, blend mixture until smooth.

5. To make Chantilly cream, whisk all ingredients together in a large bowl until firm peaks form.

6. To make chocolate sauce, stir all ingredients in a heatproof bowl over a saucepan of simmering water until melted, smooth and combined.

7. Grease a waffle maker and pour batter into cavities. Cook according to manufacturer’s instructions.
