It is alleged he was stabbed during a violent altercation with a group of people.
Members of the public tried to treat his “significant stab wounds”, police said, before he was rushed to hospital.
He died a short time later.
His grief-stricken sister has since revealed Callahan’s final request which is believed to have led to the alleged street fight and, ultimately, his stabbing.
“Rest in peace, my baby bro,” Sandie Callahan wrote.
“You loved your fishing and always dressed like a dag.
“Your last words were ‘Don’t f****** litter’.
“You can bet your ass I’ll be getting an epic tattoo in your memory.
“I’ll love you always, Jamo.”
Sandie Callahan said her brother was standing up for the environment when he was allegedly attacked.
A fundraising page has also been created to help the family pay for his funeral and memorial plaques they want to place at his favourite fishing spots.
“He was a loved son, a brother and a remarkable friend,” fund organiser Stephanie Nunn wrote.
“I cannot thank him enough for the friendship he gave those around me. He could light up the universe with his smile and loved looking after his mates,
“He loved to enjoy the things Newcastle had to offer whenever he got the chance, he loved his fishing and those who he would fish with loved his company.
“He loved and cared for the ocean and any wildlife he came across.”
CCTV footage from the scene appears to show a violent brawl breaking out on the street, outside several businesses and restaurants.
NSW Police Superintendent Kylie Endemi earlier said police were appealing to the public for information on the violent attack.
“It’s important for us to understand what happened to this young man,” Endemi said.
“It’s important for us to do that so we can assist his poor family in understanding how and why this young man passed away.
“They are going through every family’s worst nightmare.”
Two people have since been charged over the death.
A 27-year-old man was arrested at Waratah Police Station about 11am on Monday.
The North Lambton man was charged with murder and appeared in Newcastle Local Court on Tuesday.
A 33-year-old woman was arrested at a bus stop in Bankstown about 5.10pm on Monday.
She was also charged with murder and appeared in Bankstown Local Court on Tuesday.
Neither accused applied for bail, and they were remanded in custody ahead of their next court dates in January.
