Sarah Di Lorenzo talks about foods that will boost your mood

Sarah Di Lorenzo dropped by Sunrise on Saturday, speaking to viewers about foods that lift your mood.

Di Lorenzo said the best foods to lift your mood and lower cortisol are foods with lots of fibre, fermented foods, and foods with good fats.

The clinical nutritionist made macadamia nut soup and coffee infused French toast with banana and nuts.

Macadamia nut soup

Ingredients

500 grass of macadamia nuts chopped

3 peeled potatoes chopped, medium size

1 leek white part only slices

1 brown onion peeled and chopped

1 litre of chicken stock

300 ml Greek yoghurt

Salt and pepper

Garnish — fresh herbs, pumpkin seeds and chilli (optional)

Method

Preheat the oven to 180 degrees. Roast the nuts until golden brown. Add the leek, stock, onion, and potato to a saucepan.

Simmer for 20 minutes, or until the potato is soft.

Add the nuts and them blitz.

Garnish, season and enjoy.

French toast with coffee and banana

Ingredients

Six slices of wholemeal or whole grain bread

300 ml milk

2 teaspoons of instant coffee

4 beaten eggs

60 grams of butter

2 sliced bananas

1/4 cup of maple syrup

Nut crumble

1/2 cup of almond meal

60 g almond flour or flour of choice

1/3 cup of maple syrup

50 g butter

2 tablespoons of chopped hazelnuts

1 tablespoon of chopped almonds

2 tablespoons of chopped walnuts

Method

Combine all the ingredients and mix into a crumble mixture and chill.

Add milk and coffee to a saucepan and bring to the heat. Add the eggs, maple, and a pinch of salt to a bowl. Add the coffee mix and then strain into another dish. Soak the bread in the coffee mix for around 15 minutes.

Cook in a pan with the butter until caramelised. Preheat the oven to 180 degrees and line a baking tray with baking paper. Put the sliced banana and crumble on the top and bake for 25 mins.

Serve with yoghurt and passion fruit.
